Not Your Typical Chicken Salad

Years ago we would go to a cafe in Cary called Cary Cafe, and I would always get their Chicken Salad sandwich on wheat bread. It was a unique Chicken Salad with large chunks of chicken, broccoli, and red peppers with a touch of curry and a sweet mango chutney. I had longed for this, and one day, I found the recipe. This is not my recipe, of course, but I will share with you all!

Ingredients

2 chicken breasts, poached in Chicken broth

1 stalk of broccoli , just the florets

1 red bell pepper diced

1/2 cup of mayonnaise

1/2 cup of sour cream

1/2 cup Mango Chutney

1 teaspoon of Curry

Directions:

  1. Cook the chicken on a simmer in chicken broth until done, about 12-15 minutes

  2. When chicken is done and cooled, dice into chunks—not shredded

  3. Cut off the florets only of a stalk of broccoli

  4. Dice up a red pepper

  5. Make the dressing: combine the sour cream, mayonnaise, mango chutney and curry in a bowl and whisk together.

  6. Add the chicken, broccoli, and red peppers and mix together

  7. This chicken salad is best made the night before serving to have all the flavors combine.

Serve on a sandwich with lettuce and tomato.
