Southern Pimento Cheese Spread w/ Homemade Pitas
This southern classic is sure to delight, and there are many variations of this recipe. My mama used to to buy the tub of Pimento Cheese from the grocery store, but I never liked it much. It was a little mushy, and I still have not found a store-bought that I like as much as homemade, and it really is easy to create this spread with these homemade pita chips
Pimento Cheese Ingredients
1 block of extra sharp cheddar cheese (good quality)
1 jar of diced pimentos
1 tsp garlic powder
1 tsp smoked paprika
1 tsp black pepper
1/2 cup Duke's Mayonnaise
Directions
Grate the sharp cheddar cheese with a box grater. I grate it very finely, but you can do it how you wish!
Add the whole jar of diced pimentos to the grated cheese. Drain off part of the liquid, but leave some of it to mix in the pimento cheese.
Add the garlic powder, the smoked paprika, and the black pepper.
Mix together with the 1/2 cup of Duke's Mayonnaise. You can use more mayonnaise to make a more spreadable consistency (3/4-1 cup if desired).
Place is a air tight container and refrigerate for a few hours or over night for all teh flavors to come together
Homemade Baked Pitas Ingredients
1 package of store-bought pitas, white or wheat
3-4 tbsp of extra virgin olive oil
sea salt
oregano, thyme, garlic powder
Directions:
Preheat the oven to 350 degrees
Cut the pitas into triangles using a pizza cutter or knife into 8 triangles each
Place all the triangles into a plastic bag or a bowl
Add the Olive Oil, oregano, thyme, garlic powder
Mix all together, and spread out on a baking dish, separating each triangle
Dust with sea salt.
Bake the pitas in the oven for 10 minutes. 10 minutes will usually brown them without making them hard.
Serve the pimento cheese with the pitas!
